PROBLEM TO BE SOLVED: To prepare the subject Chinese noodles excellent in preservation quality by including a basic protein or peptide, glycine and sodium citrate therein. ;SOLUTION: The Chinese noodles are prepared by adding and mixing a preservative comprising a basic protein or a peptide (e.g. protamine, lysozyme, polylysine, nisin or diplococcin), glycine and sodium citrate in an amount of preferably 0.5-3wt.%, more preferably 1-2wt.% based on a powdery raw material such as wheat flour at 1:(4-250):(4-250), preferably 1:(50-100):(5-100) weight ratio of the basic protein or peptide:glycine:sodium citrate.;COPYRIGHT: (C)1998,JPO
