A soft wheat flour mixt. contains up to 25% of hard wheat flour with a mineral content of more than 1.00%. Pref. the protein content of the hard wheat flour is 1.5% higher than that of the initial durum wheat. The hard wheat flour contains 17-18% of degraded starch and has a maltose binding capacity of 3.0-3.2%.
