PROBLEM TO BE SOLVED: To provide equipment and a process for a process manufacturing a special malt, which can efficiently produce caramel malt in no need of excessive manual assistance. ;SOLUTION: This malt manufacturing process comprises the steaming step where the malt feedstock received in a roaster rotating at the first speed is heated to accelerate the liquefaction and saccharification of the malt feedstock and the drying step where the malt feedstock after going through the steaming step is dried in the roaster rotating faster than the first speed. In the steaming step, the roaster is tightly closed and hot air is fed to the periphery of the roaster to heat the malt feedstock so that the temperature of the malt feedstock in the roaster varies along the previously set ascent curve, while in the drying step, the roaster 20 is made open and flue hot air is allowed to pass through the roaster to heat the malt feedstock in the roaster so that the temperature changes along the previously set ascent curve.
