A process for preparing an enzyme-immobilising carrier comprises dissolving a chitosan of low molecular weight in an aqueous acidic solution and adding the solution dropwise to a basic solution to prepare regenerated porous chitosan in particle form, reacting the regenerated porous particulate chitosan with the glycidyl ether of an aliphatic polyalcohol, and subsequently reacting the resulting chitosan with the halide or anhydride of a higher fatty acid in a polar organic solvent. An immobilised lipase is prepared by immobilising the lipase by covalent bonds on the chitosan carrier which is obtained by introducing the glycidyl ether of an aliphatic polyalcohol in a proportion of 0.01 to 0.4 mol to 1 mol of the pyranose ring residue of the chitosan into the chitosan and also by introducing a higher fatty acid with a total number of carbon atoms of from 6 to 20 in a proportion of 0.05 to 1 mol to 1 mol of the pyranose ring residue of the chitosan into the chitosan.
