- The invention relates to a process for naturally drying oak wood by innoculation of moulds. - To this end, the invention proposes a process for drying oak wood characterised in that moulds are innoculated onto the wood to be treated in order to obtain a viable fungal flora in place which constitutes means for naturally drying and for controlling the composition of oak wood. - Application to the drying of oak wood used for the manufacture of barrels.
