Marzipan with reduced sugar content comprises (a) 35-76.5 wt.% almond kernel substance (dry solid), (b) 20-50 wt.% sugar substitute substances chosen from isomaltol or mixts. of isomaltol with sorbitol and/or xylitol, (c) 0.02-0.05 wt.% sweetener chosen from acesulfame-K (I salt of 3,4-dihydro-6-methyl -1,2,3-oxathiazin-4 -one-2,2-dioxide) or mixts. of acesulfame-K with aspartam, 9d) 12-17 wt.% water and (e) 0-15 wt.% sugar. USE/ADVANTAGE - As low sugar substitute for conventional marzipan, opt. in the form of marzipan covered with chocolate, white chocolate (cocoa butter) or low sugar chocolate. The low sugar marzipan has a flavour virtually indistinguishable from that of conventional marzipan but causes less damage to the teeth by caries formation (intra-oral pH 5.7 or higher 40 minutes after consumption).
