In floating frying of dough shapes in baskets (5) in a deep-fat frier (3), the dough items are turned by tilting the basket so that a part of the space enclosed by the basket remains below the surface of the fat. Also claimed is a device in which the baskets have a pivoting support (55) and the tilting axis remains at the same elevation during cooking and tilting.
