Floating deep-fat frying of dough items e.g. doughnuts - by transporting prod. through hot fat in baskets automatically tilted to turn dough items to ensure uniform cooking
In floating frying of dough shapes in baskets (5) in a deep-fat frier (3), the dough items are turned by tilting the basket so that a part of the space enclosed by the basket remains below the surface of the fat. Also claimed is a device in which the baskets have a pivoting support (55) and the tilting axis remains at the same elevation during cooking and tilting. Pref. the baskets are moved through the fat in a given direction, the forward motion provide the required tilting motion. A number of basket may be simultaneously immersed in and later removed from the fat. The surface of the fat is kept 8 - 15 (10 - 12) mm, above an edge of the basket which is in contact with the dough items at least during tilting, or 10-20 mm above the floor of the basket. USE/ADVANTAGE - In the preparation of doughnuts etc. The procedure is simple and allows exact cooking times for each side of the prod. to be adhered to.
