The sugar solution (7) is boiled in a boiler (1) and is transferred to the whipping machine (15). The aerated confectionary foam mass (35) is formed from the foaming agent solution (23) and the boiled sugar solution (7) and is discharged from the whipping machine (15) with the application of overpressure.
