A method of deboning halves of slaughtered animals first split along the central, longitudinal, spinal plane comprises: (a) holding the spine straight; (b) cutting through the ribs spine ends in a continuous or staggered line parallel to the spine; (c) rotating the ribs and meat relative to the spine; (d) arranging at least one further cut along the spine to remove it. A device for performing the above method is also claimed.
