1. A process for the preparation of a stable aqueous fat emulsion for use in solutions for parenteral alimentation, by emulsifying the fat under high pressure and with the use of phospholipids, in particular lecithins, as the emulsifier, wherein, in addition to the phospholipid used as the emulsifier, ubidecarenone is used as the auxiliary emulsifier in a weight ratio of phospholipid to ubidecarenone of from 150:1 to 7.5:1, and the weight of the two emulsifiers together is in a ratio to the weight of the amount of fat to be emulsified of from 1:7 to 1:30.
