That which forms the subject of the present model is a spit-roasting oven, particularly for spit roasting poultry. At the rear of the cooking zone 6 is located the brazier 2 which extends longitudinally and is isolated from the ground of the structure by a chassis or a plurality of chassis 3 which support the solid fuel. A metal sheet 9 or an equivalent structure in the form of an inverted umbrella is also provided for protecting the food against falling cinders or soot, as well as a suction hood equipped with a hatch which can be opened gradually, and is connected to the said umbrella.
