PURPOSE:To provide a delicious KUROZUKURI (salted squid mixed with sepia) produced by using sparkling enope squid as a raw material and having unique palatability originated from the moderately mixed body part softened by aging with the arm part giving light feeling to the palate. CONSTITUTION:A raw sparkling enope squid pretreated with a seasoning liquid is pickled together with an ink bag, liver of squid, syneresis-preventing agent and seasoning. The ink bag used in the above process is the ink bag of Japanese common squid or neon flying squid, etc., salted with about 20% salt and stored in frozen state and the liver of squid is liver of sparkling enope squid or other cuttlefish such as Japanese common squid mixed with about 20% salt and aged for 3-4 months.
