PURPOSE:Hooked up bonito or tunas from which heads and internals are removed are cut into 4 pieces, packed in bags, tightly sealed, took into baskets and completely refrigerated by immersing into fish holds filled with chilled calcium chloride solution, thus permitting the storage without deterioration in the freshness and color. CONSTITUTION:From bonitos or tunas hooked up in the ocean are immediately removed the heads and internals and they are cut into 4 pieces, packed into nylon bags and tightly sealed. A moderate number of the bags are took into metal net baskets and a number of baksets are immersed into fish hold filled with calcium chloride solution chilled to -30--50 deg.C, whereby the fishes are completely refrigerated. Since this method can completely refrigerate fishes only within 1hr, the thawed fishes keep freshness and show good reddish color, no change in meat quality and no fishy smell, thus being suitably eaten as high-quality ''sashimi''. Only one hour refrigeration gives another advantage of permitting the mass production.
