Prodn. of proteinaceous material from cereal straw comprises (a) pretreating particles of cereal straw in a medium, which renders the straw fermentable by the fungi Chaetomium Cellulolyticum and allows formation of a prod. contg. at least 5 wt.% of biomass (based on dry materials); (b) prepn. of a sterile fermentation medium contg. the pretreated cereal straw and non-carbonaceous nutritive elements; (c) aerobic fermentation of the pre-treated cellulosic material in the sterile medium using Chaetomium cellulolyticum, at pH 5-7 and 30-40 deg.C to produce a fermented solid biomass contg. at least 5 wt.% of fungi (based on dry material weights), the remainder of the mass comprising cellulosic material which had not been fermented and (d) sepn. of the biomass from the fermentation medium. Used for fermentation of cereal (wheat, barley, maize, rice, oats, rye etc.) straw to give a biomass having a high protein content, which is suitable for use as human and animal feeds.
