PURPOSE:To improve the preservability and prevent the lowering of the freshness of crab, krill, squilla, and hermit crab, by inactivating (chelating) the copper ions existing in the body of the above animals. CONSTITUTION:Crab, Krill, squilla or hermit crab is treated with phytic acid, 1-10 equivalent alkali metal salt of phytic acid, or their mixture with a sulfurous acid salt. Phytic acid is a naturally existing chelating agent which can extracted from the seed or the husk of various vegetables, e.g. rice bran, beans, wheat bran, etc. The 1-10 equivalent alkali metal salt of phytic acid is usually sodium salt or potassium salt.
