Prepn. of alkali or alkaline earth metal caseinate(s) - soluble in acid medium, by strong alkali treatment of a clot obtd. by acid treatment of skimmed milk, followed by re-pptn. using acid
Prepn. of an alkali(ne earth) metal casein salt is claimed in which skimmed milk is acidified by natural orby acid means to about the isoelectric paint (pH4.6 at 20 degrees C), the lactoserum is drained or filtered off, the clot is washed with slightly acid warm water opt. followed by draining and drying, and then the prod. is solubilised by an alkaline soln. at about neutral pH to form the caseinate. Before the solubilisation, the clot is first solubilised in a strongly base bath (pH10-12) constituted by an alkali-(ne earth) metal base at ordinary temp. for o0 mins to several hours, or at up to 80 degrees C for 30 min. to 3 hrs. and a pH is not 10; followed by reprecipitation of the casein at about the isoelectric point using acid, sepn. and washing with acidified water (pH 4.5). The process enables caseinates of improved solubility, partic. in acid medium (e.g. up to pH 5.2), thereby enabling a wider application of the caseinate in food prepns.
