The goods, e.g. yogurt are filled in insulating containers with an empty space above them inside the container. The filled container is immersed in a liquid to nearly the level of goods in the container. The liquid permittivity is approx. equal to that of the goods. Then the whole is subjected to a homogenous h.f. electromagnetic field, so that the whole volume of goods except the top layer is heated. The part of the goods projecting above the liq. level, and of the container enclosing the empty space above the goods, is heated by application of additional heat to approx. the same temp. as the rest of the goods. This is dome immediately before, or during, or immediately after the exposure of the container to the electromagnetic field.
