The boiler comprises a tubular enclosure having a reduced vertical vol. with a low height for the mass above the upper tubular plate. In making white sugar, low press. steam should be employed and the boiler kept under a high vacuum. The circulation in the boiler which promotes crystallisation is created by the heating of the massecuite; this reduces its density, and more esp. its viscosity, in the neighbourhood of the heating tubes or other surfaces of the calender and causes it to rise to the surface under the thrust of the massecuite from the fresher regions of the boiler. The ascending movement is accentuated by the steam bubbles which form in the hottest portion of the mass; these rise and entrain the neighbouring particles.
