The present invention relates to a method for producing dalgona sugar for cotton candy and to cotton candy made from the dalgona sugar, and more particularly, through a dalgona production step of mixing sugar, starch syrup and sodium hydrogen carbonate to prepare dalgona, and the dalgona production step. It consists of a cooling grinding step of cooling and pulverizing the prepared dalgona and a sugar mixture mixing step of mixing a sugar mixture with the mixture pulverized through the cooling grinding step. Dalgona sugar and cotton candy prepared through the above process not only exhibit excellent taste and various colors, but also contain various nutrients, thereby improving the health of the eater.
