PROCESS FOR OBTAINING GLYCAN EXTRACTS FROM APPLE POMACE, PROCESS FOR PRODUCING FUNCTIONALIZED GLYCANS, AND FUNCTIONALIZED GLYCAN THAT CAN BE PRODUCED BY THE PROCESS AND ITS USE
PROCESS FOR OBTAINING GLYCAN EXTRACTS FROM APPLE POMACE, PROCESS FOR PRODUCING FUNCTIONALIZED GLYCANS, AND FUNCTIONALIZED GLYCAN THAT CAN BE PRODUCED BY THE PROCESS AND ITS USE
The present invention relates to a process for obtaining glycan extracts from apple pomace, wherein a mixture containing apple pomace and water is provided, the mixture is subjected to an extraction treatment during which at least one glycan is extracted from the apple pomace into the water so that an aqueous glycan extract is obtained that contains the at least one glycan, at least one alcohol is added to the aqueous glycan extract, thereby precipitating a solid glycan extract that contains the at least one glycan, and the solid glycan extract is removed from the liquid. The present invention further relates to a process for producing functionalized glycans, wherein first a solid glycan extract containing at least one glycan is obtained from the apple pomace by way of the process for obtaining glycan extracts, and then the at least one glycan is reacted with at least one amine to at least one functionalized glycan. The present invention also relates to a functionalized glycan that is or can be produced according the process of the invention, and to its use.
