摘要

As a primary dietary source of carbohydrates,milled rice plays an important role in meeting energy requirements and nutrient intakes.Milled rice is a staple food for more than 70％ population of China.In recent years,as the natural disasters and other emergencies occur frequently,it is more and more important for a country to reserve adequate milled rice to ensure emergency supplies of food and maintaining social stability.Over the years,grain reserves are mainly in raw grain,such as paddy and wheat,and there are relatively few studies on the theory,technology,equipment and facilities of milled rice storage.Therefore,safe storage of milled rice is now a challenge.This article is based on the research results of scholars at home and abroad on storage and fresh-keeping technology of milled rice,overview of stored characteristics of milled rice,focuses on the effects of controlled atmosphere storage on quality of milled rice,on insect and mould control,on influence factors and its application progress,aims to provide useful information for safe storage of milled rice reference.%作为日常膳食中碳水化合物的主要来源,大米在满足人们对能量与营养的需求方面起着非常重要的作用.超过70％的中国人以大米为主食.近年来随着自然灾害等突发事件的频繁出现,对于一个国家而言,储备充足的大米,以保障粮食的应急供应和维护社会稳定显得越来越重要.一直以来,粮食储备多以原粮为主,如稻谷、小麦,而对大米储藏理论、储藏技术、设施设备的研究较少.因此,大米安全储藏成为目前的一大难题.
