The Risk Assessment Model of the Trans-Fatty Acids of Edible Oils and Processed Foods in China

反式脂肪酸包括单不饱和及多不饱和反式脂肪酸,其化学结构分别有一个或多个非共轭双键的构型.它对人体的健康会产生一些影响,如降低记忆力、导致血栓形成、影响生长发育、易引发心血管疾病等.本研究采用气相色谱法对中国居民食用油脂和加工食品中反式脂肪酸的含量进行检测,运用Crystal Ball软件对食用油脂及加工食品中反式脂肪酸的分布进行拟合,建立食用油脂及加工食品中反式脂肪酸的暴露评估和风险描述模型,利用此模型分析中国居民通过食用油脂及加工食品中反式脂肪酸摄入途径的日均暴露量和风险商值,并评价其摄入是否存在风险,为我国出台有效的控制反式脂肪酸的政策提供基础研究数据.%Trans-fatty acid including single unsaturated and polyunsaturated trans-fatty acids,whose chemical structures has one or more double-bond configurations,respectively.It has some effect on the health of human body including decreasing memory,causing thrombotic disease,affecting growth and development,initiating easily cardiovascular disease.The contents of trans-fatty acids of edible oil and processed foods are determined by Gas chromatographic method.The distribution of trans-fatty acids contents of edible oil and processed foods was fitted using the Crystal Ball software.The exposure assessment model and risk assessment model were established.The average daily doses value and Hazard Quotient (HQ) value of trans-fatty acids from edible oil and processed foods were analyzed and calculated by this model.Afterwards,the risk assessment was carried out.It can provide basic research data for government to lay down an effective policy to control trans-fatty acid.
