Rice oil is commonly known as rice bran oil,and its composition of the unsaturated fatty acids is more reasonable,mainly contain linoleic acid 38%,oleic acid 42%,and the ratio is about 1∶1.1.Moreover,this ratio is in accordance with the optimum ratio of the World Health Organization recommended,and for this reason it is widely welcomed by consumers over the world.And it is currently one of the health oil on the market.In addition,the content of unsaponifiable lipid in rice bran oil is up to about 4.2%.In particular,the content of gamma-oryzanol ranks first among the edible oil.It is reported that the content of oryzanol in crude rice bran oil is varied from 2% to 3%.The oryzanol do not dissolve in water,slightly soluble in alkaline water,soluble in a mixture of various types of fatty acids and vegetable oils,and also soluble in the mixture of fatty acids,vegetable oils and petroleum ether.%稻米油,俗称米糠油,目前是市场上的保健油品之一,其不饱和脂肪酸组成比较合理,含亚油酸38%、油酸42%,比例约为1∶1.1,符合国际卫生组织推荐的最佳比例.另外,米糠油中不皂化的脂类总含量达4.2%,尤其是γ-谷维素的含量居食用油之首,毛米糠油中谷维素含量为2%~3%.谷维素不溶于水、微溶于碱水,溶于各类脂肪酸、植物油及它们与石油醚的混合液.对于常见的有机溶剂,甲醇、乙醇在碱性条件下能溶解谷维素,在酸性环境中则相反.在0.1%的氢氧化钾乙醇溶液中谷维素在数小时内保持浅黄色;若氢氧化钾乙醇溶液的浓度达到10%时,溶液体系变为亮黄色,并有浅绿色荧光.
