The laboratory assessment of selected minerals and trace elements of eight different diets from German hospitals in our study showed that the recommended dietary allowances were not met for iron, zinc and copper, whereas the supply of calcium, manganese and selenium was within a sufficient range. As a first step for the improvement of patients' nutrition in hospitals the higher inclusion of foods rich in iron, zinc and copper, such as low fat meat and whole grain products should be reconsidered. A regular control of the offered diets in hospitals and the menu plans by laboratory assessment of selected nutrients is recommended within a period of four to six months. Menu planning on the sole basis of food databases is insufficient to secure the adequate supply of minor essential nutrients and should be controlled in the interest of patients' health.
