Introduction Different species milk protein has been widely studied recently.Casein (CN) and whey proteins affect milk nutritional and technological properties (Bonfatti et al.,2010).Cow milk caseins account for nearly 80% of the total milk protein,includingαs1-CN,αs2-CN,β-CN and κ-CN constituents which were in the approximate proportion of 4∶1∶4∶1,while whey proteins containα-lactalbumin (α-La) and β-lactoglobulin (β-Lg),in the relative proportion of 1∶3 (Valentina Bonfatti et al.,2008).However,the major milk protein components contents of different species are not consistent with each other.Although cow ranks at the first osition for milk production in China,buffalo,goat and yak milk also played important roles in the development of milk production.And several researches have reported the milk protein components and their conents through different methods.
