Rearrangement of the fatty acid the triglycerides of palm olein was enzymatically catalysed using celite-adsorbed Candida cylindracea lipase in water-saturated hexane. Changes in the triglyceride profile were determined using reverse-phase HPLC. Hydrolysis, occurred simultaneously and was monitored by titration of the liberated free fatty acids (FFA) with NaOH and by the percentage of tri- and diglyceride remaining.
