摘要

Bitter buckwheat not only has a special constant nutritional components (protein composed of a reasonable essential amino acid composition, starch with higher proportion of resistant starch, fat with high proportion of non-saturated fatty acid), but also contains a variety of trace elements that is useful for human body, such as chiral inositol, rutin, and quercetol etc. That is why it has so many health functions as lowering blood glucose, lowering blood fat, lowering blood pressure, anti-anaemic, anti-fatigue and anti-oxidation etc. A considerable amount of studies have reported its nutritional value and health functions from different perspective, but most of them focus on flavonoid and trace elements and only a few on protein. Zhang Zheng from China has studied the health functions of buckwheat protein extraction, but not made a further research on separation, purification and expression of bioactive substances. Chun-Huili from Japan achieved antihypertensive peptides from buckwheat flour by enzymic hydrolysis.
