摘要

Microwave radiation was employed to inhibit or destroy the activity of polyphenoloxidase(PPO) and peroxidase (POD) in sugarcane. Through comparing the activity of PPO and PRO in samples which undergo microwave radiation with that of blank sample, our studies demonstrate that the optimal inhibitory effect can be obtained by the radiation of middle-high intensity microwave for 4 minutes or the radiation of high intensity for 2 minutes, the colouring by the catalytic oxidation of such composition as phenol compound, tyrosine, and ferrous compound in cane juice can be effectively controlled.
