The extraction of polyphenols from Pteridium aquilinum was optimized to maximize polyphenol yield, Y.A central composite design involving ethanol concentration (X1), extraction temperature (X2), extraction time (X3) and ratio of liquid to solid (X4) was used, and second-order model for Y was employed to generate response surfaces.The optimum conditions for polyphenol extraction were X|= 50.00 %, X2=68.69 °C, X3= 20 min, and X4= 36.14.The estimated value of Y at the optimum was 90.85 %.Experimental verification gave the value of Y= 91.61.
