The average iron (Fe) content (0.6mg/100g) of Australian pork is below 10% of recommended daily intake. This leads to reduced consumer perception of pork’s nutritional status, thereby negatively influencing product value and sales. The aim of this experiment was to determine if muscle Fe could be increased in pigs by injection of erythropoietin (EPO), which has been shown to stimulate erythropoiesis and increase the Fe content in human muscle (Robach et al., 2009). We hypothesised that injection ofhuman recombinant EPO would increase muscle iron content in pigs.
