摘要

The selection of varieties with minimum poly saccharifies, control over harvesting and transport practices, effective mill sanitation conditions and the removal of remaining polysaccharides at the further processing stages with the application of specific enzymes like α-amylase for starch hydrolysis and dextranase for dextran hydrolysis plays an important role in sugar processing for controlling polysacchrides in regard to improved performance of sugar processing and hence also the quality of sugar.
