Folate (vitamin B9) is typically lacking in Western diets, potentially increasing the risk of several chronic diseases. Beer is a good source of folate, and our benchmarking of international beers recorded levels from 30-150 microgram/litre. Analysing by type, Bavarian wheat beers had a high average folate content, which we investigated in detail and report on here. The folate content during wheat malting and at stages during the production of Weissbier were monitored. Overall we measured a 30-35 % recovery of folate in beer from the malt. Mash thickness was an influential parameter on folate recovery, and bottle conditioning also increased folate content.
