Urine is a human biofluid that is widely used for searching potential metabolite biomarkers of diseases. Ideally, the metabolome profiles generated from comparative groups of individuals should contain endogenous metabolites that indicate the health states of the individuals. However, the intake of food prior to the collection of urine may induce changes in the urine metabolome profile by introducing a significant amount of exogenous metabolites. Red wine is a widely consumed drink and its overall impact on the human metabolome composition is not widely known. In this work, a highly sensitive dansylation isotope labeling liquid chromatography mass spectrometry method was developed for determining red wine profiles. Human urine samples before and after drinking red wine were analyzed to determine exogenous metabolites.
