White fish from Patzcuaro lake, Mexico (Chirostoma estor) obtain are very high price in the market and are appreciated as a traditional gourmet food in the region. However, it is now considered as an endangered species because it has been over exploited and there is a serious habitat deterioration. Aquaculture represents the only sustainable way to maintain its production. Although fingerlings are now currently obtained in the laboratory, the nutritional requirements during larval development is yetto be established.
