The rapid increase of production of the two marine fish species, gilthead sea bream, Sparus aurata and sea bass, Dicentrarchus labrax, brought about a reduction of the ex-farm price at levels in many cases lower than the production cost. To overcome this crisis the industry has moved towards the investigation of species diversification. Sharpsnout sea bream is one of the new sparid candidates that has drawn attention with pilot cultivation studies to produce promising results, demonstrating successful reproduction, high growth rates and adjustability to the conditions of intensive rearing (Franicevic, 1989). Feeding of this species is based on diets formulated for gilthead bream, since the knowledge of the nutritional requirements of this species islimited. Sharpsnout bream is an omnivorous species utilizing dietary protein, lipids and carbohydrates. The determination of optimum ratio between the main nutrients is of major importance for the successful formulation of diets for cultivated species.Higher substitution level than the optimum can cause reduction of growth rates and increased fat deposition. The aim of this work was to investigate and determine the optimum fat and fibre level in experimental sharpsnout sea bream diets in order to improve growth. An evaluation of these diets was also performed by investigating digestibility, gastric evacuation rate and some haematological parameters in sharpsnout sea bream.
