Nutritional manipulation of functional foods derived from herbivores for human nutritional benefit

Many functional food opportunities exist that can be developed from manipulation of ruminant diets that may contribute to the health of human consumers. This chapter focuses on dietary changes that can enhance the naturally occurring levels of conjugated linoleic acid, or the introduction of long-chain polyunsaturated fatty acids (FA), with their resulting accumulation in ruminant products, with an emphasis on results using beef and dairy cattle. An objective of our review was to also link the opportunities for these functional foods with the literature from fields of human health to appraise the potential for human health impact. In most cases, long-term epidemiological data are unavailable for such functional foods and chronic health problems. However, most clinical trials using conjugated linoleic acid have shown limited benefit for a wide range of health parameters. Long-chain polyunsaturated fatty acids such as docosahexaenoic acid have shown some health benefits, particularly in terms of cognitive and visual development in premature and young infants, and there is evidence to support n-3 fatty acids as beneficial in the treatment of cardiovascular disease. Functional foods represent an excellent opportunity to develop value-added products, but to realize their full potential and maintain consumer confidence specific health claims should be made with care.
