Introduction Taste sensations are provided by three different nerves, which is the chorda tympani nerve (CTN) the major taste nerve. It innervates taste buds in the two anterior thirds of the tongue, the glossopharyngeal nerve innervates taste buds in the posterior third of the tongue. The petrous major nerve innervates taste buds in the palate. Taste transmits through taste buds located on the surface of papillae on the tongue, in the palate and the pharynx. There are three different types of taste buds: fungi form, foliate and vallate papillae. The individual number of taste buds varies greatly in man, ranging from approximately five to ten thousand and even more in children. They have a turnover rate of ten to fourteen days. Five different taste qualities have been described: salty, sweet, bitter, sour and umami. Each taste bud has the ability to detect more than one of these taste qualities and they are spread all over the tongue. Earlier it was believed that different locations on the tongue were more sensitive for each of the taste qualities, but there is no evidence for that hypothesis.
