It is well known the essential role of iron as part of meat pigments, from the sensorial point of view. Oxidation of these porphyrin pigments can result in the presence of peroxide hydrogen produced under the action of microorganisms. The aim of the present study was to protect deoxymyoglobin MbFe (II) using a Rubus fruticosus anthocyanin hydroethanolic extract. Good results were obtained with an addition of 0.4% anthocyanins extract. An accelerated oxidation was registered in the presence of anthocyanins extract showing a slight improvement in the antioxidative effect, by reducing the pH value from 5.8 to 4.9.
