Color is an important parameter for describing quality of raspberry purees with seeds. Color and consistency are the most important parameters describing quality of raspberry puree without seeds. Cultivars Meteor and Balzam' werev the best for raspberry puree with seeds and Meteor, Balzam', and Norna for raspberry puree without seeds. Solnisko was not acceptable for any puree because of its high bitterness. Puree without seeds had higher acceptance and less off-flavor than puree with seeds. Other raspberry products with seeds have to be developed to improve consumer acceptability. Product acceptability is a complex phenomenon and is not dependent on any single sensory attribute.
