江西省3498份食品样品中铝污染检测分析

         

摘要

To understand the current situation of aluminum pollution in different regions,different categories and different links in Jiangxi Province,and to provide the basis for formulating control measures for food aluminum pollution.Methods 3 498 food samples were collected from Jiangxi Province,which were tested with GB/T 5009,taking aluminum residue(dry basis)as the test item.The results were assessed by GB2760.361 of 3 498 samples contained aluminum additive,the failure rate was 10.3%.According to the classification of food,fried wheat flour products had the highest failure rate(23.92%),followed by wheat flour(18.53%),baked food had the lowest(6.19%),the difference was statistically significant(χ2=102.679,P<0.001).According to the classification of food packaging,the unqualified rate of bulk food(13.3%)was significantly different from that of standard packaging(8.5%)(χ2=20.099,P<0.001).According to the different aspects of food classification,the failure rates of the food and beverage link,production link and circulation link were 18.7%,3.9% and 2.7% respectively,the difference was statistically significant(χ2=234.304,P<0.001).According to the classification of different regions,there was a significant difference in the rates of unqualified samples in different regions,for instance Nanchang and other 6 cities had the failure rate exceeding 10%.In food products,especially fried wheat flour products,bulk food and the food and beverage link the unqualified situation about aluminum was serious,the regulatory authorities should energize the supervision of the implementation of the standards for the use of aluminum containing food additives.%为了解江西省不同地区、不同类别、不同环节食品中铝污染现状,在江西省采集3 498份食品样品,采用方法GB/T5009,检测项目仅限于铝的残留量(以干基计),检测结果按照 GB2760 进行评价.结果显示:3 498份样品中共检测出含铝添加剂样品361份,不合格率10.3%.根据食品类别来分,油炸小麦粉制品不合格率最高(23.92%),其次为小麦粉(18.53%),焙烤类食品不合格率最低(6.19%),差异有统计学意义(χ2=102.679,P<0.001);根据食品不同包装形式分类,散装食品不合格率(13.3%)比定型包装不合格率(8.5%)高(χ2=20.099,P<0.001);根据食品不同环节分类,餐饮环节、生产环节、流通环节不合格率依次为18.7%、3.9%、2.7%,差异有统计学意义(χ2=234.304,P<0.001);根据不同地区分类,不同地区的样品不合格率有显著性差异,南昌市等6个地市不合格率均超过10%以上.江西省食品中特别是油炸小麦粉制品、散装食品和餐饮环节铝不合格情况比较严重,建议监管部门应加大对含铝食品添加剂使用标准执行情况的监管力度.
