青川黑木耳吸水机理研究

         

摘要

黑木耳具有优良的吸水性能。通过IR和SEM研究了黑木耳的化学组成和微观结构,研究了其在不同温度、不同溶液环境下的吸胀曲线,并研究了其保水和重复吸水能力。结果表明,黑木耳富含羟基、羧基、酰胺基等吸水基团,木耳胶质主要为疏松多孔结构,腹侧角质层较为致密,含少量微孔,背侧含有丰富的纤维绒毛,绒毛直径约为5微米。吸水性能测试结果表明,木耳具有良好的吸水能力,最大吸水倍率为23倍,且具有优良的保水及复水能力。%The chemical components and morphology of the Jew’s ear,that is Auricularia auricular( A. a) ,were researched using in-frared spectroscopy( IR) and scanning electronic microscope( SEM) ,and rehydration curves were plotted in different conditions such as temperature,solutions and solution concentrations. In addition,the retention capacity and repeatability of the samples were inves-tigated. The results show that -OH,COOH,CO=NH and -NH2 chemical groups exist in the samples. The hydrophilic colloid in A. a exhibits porous morphology. The microvilli layer on the back side of A. a is thought to be responsible for the capillary absorbing water,while the tight layer on the ventral side forbids the borne water from escape. The rehydration testing results show that the A. a has the highest water absorption ratio,up to 23,and exhibits excellent water retention and reusable property.
