运用响应面法确定粗糙脉孢菌(Neurospora crassa)固体培养发酵产番茄红素的工艺参数,并对其所产的番茄红素进行抗氧化活性研究.结果表明,最佳发酵工艺条件为:发酵温度30℃,接种量0.95%,发酵时间95 h.在该最佳条件下,番茄红素产量为(2.45±0.16) mg/g.所得番茄红素对DPPH自由基的清除及Cu2+诱导低密度脂蛋白(LDL)氧化修饰的抑制均有明显的效果.%The fermentation process parameters of Neurospora crassa for the production of lycopene in solid-state culture were determined by response surface methodology,and the antioxidant activity of the lycopene was studied.Results showed that the optimum fermentation conditions were obtained as follows:fermentation temperature 30 ℃,inoculum 0.95%,fermentation time 95 h,and the yield of lycopene was (2.45±0.16) mg/g under the optimal conditions.Moreover,lycopene had obvious effects on both DPPH scavenging ability and low density liporotein (LDL) oxidation inhibition induced by Cu2+.
