智能气调保鲜实验装置研制与教学应用

         

摘要

There are some shortcomings for traditional methods of food storage such as the large sample size, high running cost,complex operation,teaching inconvenience, and so on. In order that the teaching experiments of controlled atmosphere storage in the courses of Storage and Distribution of Fruits and Vegetables,and Food Preservation could be carried out normally,the intelligent experimental device for controlled atmosphere storage is developed by detailed exploration and design. It made the controlled atmosphere experiments have more diversified models,controllable parameters,simple operation and intuitive teaching.This device is applied to experimental teaching and open experiment projects in undergraduate courses for specialties of Food Science and Engineering,and Food Quality and Safety,thereby achieving better effects.%针对传统食品保鲜方式存在样本量大、运行费用高、操作复杂、教学不便等缺点,为了保证“果蔬贮藏运销学”、“食品保藏学”课程中气调贮藏教学实验的正常进行,经过充分探究与设计,研制出一种智能气调保鲜实验装置,实现了气调保鲜实验的模型多元化、参数可控化、操作简单化、教学直观化,将该装置应用于食品科学与工程、食品质量与安全专业本科课程实验教学和开放性实验项目,取得了较好的效果。
