食源性雌二醇残留检测技术研究进展

         

摘要

As a female sex hormone,estradiol (E2) is a most important form of estrogen in humans and animals,it triggers the reproductive system development during the puberty,which is involved in a number of physiological processes,including development of the female reproductive structures and secondary sexual characteristics.E2 is a typical natural estrogen used extensively in livestock for promotion of their growth.It is now widely exist in the environment and caught many attention by scientists due to the biological estrogen effects which can cause carcinogenicity.Therefore,in order to ensure food safety and human physiological health,it has very important to monitor and control the estradiol residues in food source and improve detection technology.The main residual sources,hazard analysis and detection techniques of food source E2 were discussed in order to provide a reference for E2 biological activity research and convenient and effective detection techniques establishment.%具有促生长、催情作用的雌二醇在畜牧业生产中已发挥重要作用,然而广泛的不当应用常导致食源性雌二醇残留的严重后果.当前,雌二醇残留导致的生物雌激素样作用、弱致癌性已引起全世界的广泛关注,加强食源性雌二醇残留的监测与管控,加强对雌二醇残留检测技术的研究与应用,对于保障食品安全与人类生理健康等具有十分重要的现实意义.该文概述了食源性雌二醇的主要来源、残留危害分析和主要检测分析技术.
