养殖三文鱼与挪威三文鱼营养成分的比较分析

         

摘要

The contents of nutritive composition were measured in the muscle of artificial breeding salmon and Norway salmon. The results showed that the contents of moisture, crude ash, crude protein, crude fat of artificial breeding salmon and Norway salmon were 62.10%, 1.92%, 21.01%, 14.94% and 69.01%, 1.88%, 21.66%, 7.37%. 18 common acids were found in the both musles, and the total content of amino acid (TAA), 8 essential amino acids (EAA) and 5 flavour amino acids(FAA) were 32.22%, 13.93%, 11.42% and 29.95%, 12.46%, 10.66%. The contents of minerals were also abundant in two salmon musles.%对人工养殖三文鱼和挪威三文鱼肌肉中营养成分进行了分析检测.结果表明:养殖三文鱼和挪威三文鱼肌肉中水分、灰分、粗蛋白质、粗脂肪的质量分数分别为62.10%、1.92%、21.01%、14.94%和69.01%、1.88%、21.66%、7.37%.两种三文鱼肌肉中均含18种氨基酸,总氨基酸含量、8种人体必需氨基酸、5种呈味氨基酸含量分别为32.22%、13.93%、11.42%和29.95%、12.46%、10.66%.两种三文鱼肌肉中均含有丰富的常量及微量元素.
