荔枝速冻保鲜技术研究进展

         

摘要

Litchi is native to China, the planting area and yield of China litchi are the highest in the world, that known as the 'south China four fruits' with banana, pineapple and longan. However, the harvesting time and storage time for litchi are short, and the litchi is prone to brown and easily get to corrupt after harvesting. All these limitations has seriously restrict the further development of litchi industry in China. This paper briefly in-troduced the current situation of the development of Chinese litchi industry. The application and latest advances of quick frozen technologies for litchis storage were also reviewed, including raw materials selection, pretreat-ment, freezing, frozen storage and thawing process. Until now, the immersion quick-frozen technique was the most feasible way for quick frozen of litchi. Finally, the further development for quick-frozen of litchis were prospected.%荔枝原产于中国,其种植面积和产量均居世界首位,与香蕉、菠萝、龙眼并称为南国"四大品果".荔枝的采收期短、采后易褐变腐败、不耐贮藏等特点,严重制约中国荔枝产业的进一步发展.简要介绍中国荔枝产业的发展现状,综述近年来关于荔枝速冻保鲜技术在原材料的选择,预处理、冻结、冻藏及解冻等各工艺环节的应用现状和最新进展,并指出液浸速冻是目前该领域较为可行的保鲜技术;最后,展望了速冻荔枝的发展前景.
