以荸荠为原料,研究纤维素酶协同超声波辅助提取荸荠多糖的最佳工艺。在单因素试验基础上,利用响应面法,以多糖提取率为响应值,建立数学模型,获得最佳工艺。通过二次回归模型响应面分析得出荸荠的最佳提取工艺条件是超声温度62℃,超声时间21 min,超声功率600 W,酶解温度40℃,酶解时间42 min,纤维素酶用量174 U/g,pH为6.0。在此最佳工艺条件下荸荠多糖提取率为4.46%,理论值为4.53%,相对偏差为1.39%。由响应面法优化得到的荸荠多糖的提取工艺方便可行。%With Eleochairistoberosa as raw material, the extraction process of Eleochairistoberosa polysaccha-ride by Cellulase-assisted ultrasonic hydrolysis method was studied. Response surface method(RSM) was used to establish the mathematical model of ultrasonic extraction of Eleochairistoberosa polysaccharides to obtain the optimum conditions based on single factor experiments. The optimum conditions obtained through RSM analysis were as follows:ultrasonic temperature 62 ℃, ultrasonic time 21 min, ultrasonic power 600 W, enzymolysis temperature 40℃,enzymolysis time 42 min , cellulose 174 U/g, pH6.0. Under the optimized conditions, the maximum predicted extraction efficiency of polyphenols was 4.53%, which was close to the actual average val-ue of 4.46%with a relative error of 1.39%. Optimization of the extraction process by RSM of Eleochairisto-berosa Polysaccharides is convenient and feasible.
