It often used as emulsifier, thickener, microcapsule wall materials due to excellent properties of hydrophilic and lipophilic, and the prospect of the application is broad. In recent years, it has attracted wide attention. Therefore, the reaction mechanism, physicochemical properties and research status of octenyl succinic anhydride modified starch are reviewed , aiming to provide a reference for the further study of octenyl succinic anhydride modified starch.
