Factor analysis method was adopted to analyze the relationship of vegetable consumption per capita with price, En-gel coefficient and alternatives. It was concluded that the price of food supplies had very significant effect on the consumption of vegetables through sorting the composite score. As a life necessity for urban residents, the elasticity of demand of vegetables was low, thus the price of vegetables had no significant effect on their consumption.%运用因子分析法分析河北省城镇居民人均蔬菜消费量与价格、恩格尔系数和替代品之间的关系,通过综合得分排序,得出粮食价格的高低对蔬菜消费量的影响极显著.蔬菜作为城镇居民生活的必需品,需求弹性较小,蔬菜价格对蔬菜消费量影响不显著.
