烤烟外观质量与其感官评吸质量关系研究

         

摘要

[目的]探索烤烟生产技术改进方向.[方法]2013年采集全国主要烟区烟叶样品,进行外观质量和感官评吸鉴定,分析外观质量与其感官评吸质量的关系.[结果]烟叶身份与香气质、刺激性得分相关性较强,其次是烟叶颜色,均起正作用;烟叶叶片结构对香气量得分的负面影响最大,其次为烟叶颜色,起正作用;烟叶颜色对烟叶杂气得分的负面影响最大;烟叶颜色与余味得分的关系最紧密,其次为烟叶油分,均起正作用.[结论]初步认为现阶段国产烤烟生产主要改进方向为通过调整栽培调制技术改善烟叶颜色和叶片结构,提高烟叶油分.%[Objective] To explore the improvement direction of flue-cured tobacco production technology.[Method] In 2013,tobacco samples were collected from main tobacco growing areas in China,and the appearance quality and sensory evaluation were carried out to analyze the relationship between appearance quality and sensory smoking quality.[Result] The correlations between tobacco identity and aroma quality,irritancy were closer,followed by leaf color,which was positive.There was the highest negative impact of tobacco leaf structure on its volume of aroma,followed by leaf color.The color of tobacco had the most negative influence on the score of tobacco offensive flavor.The relationship between the color of tobacco leaf and the score of aftertaste was the most closely,followed by the oil of tobacco leaf,all of which played a positive role.[Conclusion] It is preliminarily believed that the main improvement direction of domestic flue-cured tobacco production at present stage is to ameliorate the color and leaf structure of tobacco leaves and to improve the oil content of tobacco by adjusting the cultivation modulation technology.
